2 1/4 cups all purpose flour1/2 cup powdered sugar1 cup (1/2 pound) butter4 eggs2 cups granulated sugar1/3 cup lemon juice1/2 tsp. baking powder
Makes 32 bars (2 in. X 1.5 in.).
Sift together 2 cups of flour (hold the other 1/4 cup for later) and 1/2 cup powdered sugar. Cut in butter until mixture resembles crumbs. Press into 9 X 13 pan. Bake at 350 for 20-25 minutes, until the crust is light brown.
While crust is baking, combine eggs, lemon juice, and sugar in blender. Blend several minutes until very thick. Add the last 1/4 cup flour and the baking powder and blend a few seconds more.
Pour lemon mixture onto prepared crust and bake 20 minutes, until a light golden brown.
After it cools, you can sprinkle a touch of powdered sugar on the top if you don't mind the sweetness.
