Cranberry Chocolate Muffin

Ingredients
1/3 cup maple syrup1 Tbsp water1 Tbsp ground stevia1/2 cup unsweetened applesauce3/4 cup nonfat milk2 Tbsp coffee3 large egg whites3/4 cup fat-free vanilla yogurt1 tsp vanilla extract1 1/2 cup whole wheat flour1/2 teaspoon sea salt1 tsp baking powder1 tsp baking soda7 Tbsp unsweetened cocoa powder1/2 cup dried cranberries
Directions
Makes 12 muffins

Heat oven to 325° F.
Prepare muffin pan with muffin liners.
Combine dry ingredients in a large mixing bowl.
In a second bowl, combine wet ingredients.
Stir all ingredients together being careful not to overmix.
Fill the muffin cups 3/4 full.
Bake at 325° F for 20 - 25 minutes, or until an inserted toothpick comes out clean.
