Pepper Beef Stroganoff

Ingredients
12-14 oz beef round steak or roast1/2 white onion1 cup red bell peppers1 cup fat free brown gravy1/4 cup low-fat sour cream8 oz sliced mushrooms1 tsp thymesalt and pepper to taste2 tbsp olive oil
Directions
pre-heat 2 tbsp olive oil in a stainless skillet, cook onions, and mushrooms with thyme until vegetables are slightly soft. Add steak or roast after if using left-over roast or cook from fresh with vegetables until meat is cooked. Added 1 cup brown gravy and 1/4 cup of sour cream, bring to a boil, then reduce and simmer for 15 min. Serve over brown rice or wheat egg noodles.
