Naturally firmented Veggies

Ingredients
Cabbage, red, fresh, 1 head, medium (about 5" dia) (remove)Cabbage, fresh, 1 leaf, large (remove)Onions, raw, 1 large (remove)Kale, 2 cup, chopped (remove)Beets, fresh, 3 beet (2" dia) (remove)Garlic, 3 clove (remove)Salt, 4 tbsp (remove)Spinach, fresh, 1 package (10 oz) (remove)
Directions
chopp everything up...mix together in large bowl add salt..mix again..squeeze veggies with your hand to release juices..when you get a good juice flowing pack into canning jars...put on lid and tighten. Let sit in a dark place..room temp..for 3 days to 14 days...you can check for your desired sour taste..should smell stinky and taste like pickled veggies! This oh so good for your gut..it is like yogurt on steriods!
