Beef Enchiladas

Ingredients
1 Bag Tortilla Chips (1-pound)1 pound ground beef1/3 cup finely chopped yellow onion1 can (10 1/2 ounces) enchilada sauce1 can (8 ounces) tomato sauce1/4 cup water1 envelope (about 1 ounce) taco seasoning mix1 cup shredded mild Cheddar Cheese1 cup shredded Monterey Jack Cheese2.25 oz black olives, drained and chopped6 Green onions, finely choppedSour cream (optional)Guacamole (optional)
Directions
1. Preheat oven to 350 F.
2. Cook and stir ground beef and onion in large skillet over medium-high heat, stirring to separate meat, until beef is browned; drain fat. Add enchilada sauce, tomato sauce, water and taco seasoning mix. Bring to a boil over high heat. Reduce heat to low and simmer 20 minutes.
3. Combine beef mixture with 2/3 of tortilla pieces in large bowl, transfer to 13x9-inch backing dish. Top with remaining 1/3 of tortilla pieces, cheeses, olives and green onions. Bake about 5 to 10 minutes or until cheeses are melted. Serve with sour cream and guacamole, if desired.
Makes 6 to 8 servings.
