Pecan Crusted Pork Chops

Ingredients
1 egg white, slightly beaten 1 tablespoon Dijon style mustard 3/4 cup soft bread crumbs (1 1/2 slices) 1/2 cup finely chopped pecans 1 clove garlic, finely chopped 6 pork loin chops, about 3/4 inch thick 2 tablespoons vegetable oil 1/2 cup dry white wine or chicken broth 1 tablespoon chopped fresh parsley 1 teaspoon Dijon style mustard
Directions
Mix egg white and 1 tablespoon mustard. Mix bread crumbs, pecans and garlic. Dip pork into mustard mixture, then coat with pecan mixture.

Heat oil in 10-inch skillet over low heat. Cook pork in oil about 10 minutes on each side or until coating is golden brown and pork is tender and slightly pink when centers of thickest pieces are cut. Remove pork from skillet.

Stir wine, parsley and 1 teaspoon mustard into skillet. Heat to boiling over high heat. Cook 3 to 4 minutes, stirring constantly, until sauce is reduced by half. Pour sauce over pork.
