Vegetarian Stew

BASE1 large can of chopped stewed tomatoes1 can of chickpeas1 large yellow onion2 cups water.25 cup olive oil2 tbsp honey1 tbsp Sriracha hot sauceheaping tbsp. chopped garlicitaliano seasoning (to taste)salt/pepper (to taste)dash of red wine VEGGIES2 large carrots1 large zucchini1 large yam2 medium potatoes
Preheat oven to 350 F
Combine base ingredients in slow cooker and set on high. Onion should be chopped and allowed to cook in the base for more flavour.
Meanwhile, chop veggies into 1" cubes, pealing the carrots, and place on a greased baking sheet. drizzle a bit more olive oil over all and sprinkle with more italiano seasoning. Roast the veggies in the oven for approx. 20-25 minutes or until edges are crispie.
add to slow cooker and allow to cook for approx 1-2 hours or until onions are fully cooked.
