Linda's Banana Muffins

Ingredients
1 1/2 cup all-purpose flour1 teaspoon baking soda1 teaspoon baking powder1/2 teaspoon salt3 med (6 1/2-7 inch) bananas, mashed3/4 cup Splenda1 lg egg1/3 cup cookable diet margarine (I used Brumble n Brown)
Directions
Yeild - 12 large muffins or 42-48 mini muffins. I make the mini's

Preheat oven to 350*F (175* C). Line muffin cups with paper liners or spray with cooling spray (I like cooking spray)

Peel bananas and mash them in a medium mixing bowl. Add Splenda, diet margarine, and egg. Mix. Add dry ingredients and mix until smooth. Scoop into muffin pans.

Bake in preheated oven. Bake mini muffins for about 12 minutes and large muffins for 25-30 minutes. Muffins will spring back when touched.

112 calories for regular muffins and 32 for mini muffins.
