Crock pot Kielbasa Bean Soup

Ingredients
14 ounces louis rich turkey kielbasa1 can black beans, rinsed1 can pinto beans, rinsed1 can diced tomatoes4 carrots, peeled and chopped (about 1 cup)4 stalks celery, peeled & Chopped (about 1 cup)1/2 onion, chopped (about 1/2 cup)4 cups chicken broth2 tsp thyme
Directions
Chop veggies and kielbasa, put into crock pot. Add rinsed beans and can of tomatoes. Top with chicken broth, stir lightly. Add 2 tsp thyme and simmer on low all day.

Serving size is a heaping cup ful. This will make about 10 cups total.

    This was great! My servings came out to have 6 grams of fiber.. not sure how that happend. I also used unsalted chicken broth to lower the sodium. Next time I will saute the kielbasa first so it's a little carmelized before putting it in! - 5/20/09

    This was a great hearty soup! I will admit that I added a bit of garlic paste, simply because it marries so well with tomatoes. This soup has many possible versions! Like it spicy? Add red pepper flake. Add any combo of veggies. Yummy! - 2/2/12

    My picky husband LOVES this soup! I do a few things differently: 8 oz. dry pinto beans instead of canned; 8 oz. dry split peas instead of black beans; two whole chopped onions; and 56 oz. (7 cups) low sodium fat free chicken broth. ABSOLUTELY DELICIOUS and surprisingly filling! - 9/30/11
