Fresh Pea Soup

2 slices bacon, cut up1 large onion, chopped1 cup celery chopped (about 5 stalks)1 tbsp EV Olive Oil4 cups romaine lettuce, shredded (about 2 heads)1 16 oz bag of frozen peas or 1 pound fresh2 cans low sodium chicken broth1 can skim evaporated milk
Heat up a large dutch oven and add bacon. Cook a few minutes. Add onion, celery and olive oil and cook until onion is tender and slightly brown (about 5-8 minutes) If greasy, drain.
Add shredded lettuce, peas and broth. Heat on high till boiling. Reduce heat and simmer about 5 minutes or until peas are tender.
Place most of the soup in food processor and process until chunky smooth. (leave some unprocessed to add some chunkinest.
Return to pot and add milk. Stir well and reheat if needed. Add some fresh ground pepper and salt if desired and serve.
