Ingredients
1 cup slice onion1 clove garlic, minced1 cup unsweetned pineapple juice1/4 cup tomato paste2 tablespoons brown sugar2 tablespoons soy sauce1 tablespoon red wine vinegar2 teaspoons curry powder1 tablespoon all purpose flour1.5 pounds lean boneless round steak, cut into 1 inch pieces1 teaspoon olive oil1 can drained sliced water chestnuts1/2 medium size green pepper cut into strips1/2 medium size red pepper cut into strips8 strips lemon rind
Directions
Coat a wok or large nonstick skillet with 1 tsp olive oil. Place over medium high heat until hot. Add onion and garlic, and stir-fry 3 minutes or until tender, transfer to a medium bowl. Add pineapple juice and next 6 ingredients to onion mixture; set aside.

Sprinkle flour over steak, tossing to coat well

Add olive oil if necessary to pan and saute steak pieces, stir-fry 3 minutes or until meat is browned on all sides. Add pineapple juice mixture and bring to a boil. Reduce heat to low; cover and simmer 30 minutes

Add water chestnuts, pepper strips and lemon rind to beef mixture, stirring to combine, cover and cook 15 additional minutes or until meat is tender. Remove and discard rind before serving.

Arrange 1 cup rice on each of 6 individual serving plates. Top with beef and veetable mixture Yield 6 servings. Rice is not included in caloric count.
