Baked Oatmeal Porridge

Ingredients
2 tbsp butter, melted2 eggs, lightly beaten3/4 cup dark brown sugar1 1/2 tsp vanilla extract4 tbsp unsweetened applesauce1/2 tsp cinnamon1/4 tsp nutmeg3 cups quick or old fashioned oats1 cup milk1 1/2 tsp baking powder1/4 tsp salt
Directions
Spray a casserole dish with nonstick cooking spray.

In casserole dish, combine butter and eggs, whisk. Add all other ingredients except for oats, whisk until smooth. Add oats and stir to combine. Cover and refrigerate overnight.

Heat oven to 350F. Bake uncovered for 30-40 minutes until lightly brown and set in the center.

Serve plain or pour milk over it. Can also be baked in muffin tins. Yield: 6 muffins or 6 servings.
