Ingredients
Mashed Potatoes:4.5 lbs potatoes, scrubbed, chopped, and boiled - mash with1/2 C Buttermilk1/2 C Half and Half1/4 C Butter1 tsp Salt (or to taste)1 lb Ground Lamb1 Smallish Onion, chopped2 Carrots, chopped3 Stalks Celery, chopped1 tsp Thyme1 tsp Marjoram1 tsp Salt1 C Peas, Frozen1 C Beef Stock1 Tbsp Arrowroot Flour (or other thickener)
Directions
Make mashed potatoes. At same time, brown lamb w/onions. Add carrots, celery, and herbs and cook gently 10 min. Add peas. Dissolve arrowroot in cold broth, then add to pan w/ other ingredients and heat until thickens.

Put lamb mix in bottom of casserole, top w/potatoes. Bake at 350 for 30 min or until lightly browned on top.

I use two medium dishes for this, cover one closely w/foil and freeze.
