Just Good Burritos

Ingredients
Directions
1 small bunch kale--apprx 8 oz rinsed and cut into bite size pieces1/2 head of napa cabbage---apprx 20 oz--rinsed and cut into bite sized pieces (core removed)1/2 teaspoon garlic powder1/4 teaspoon black pepper1/4 teaspoon red pepper1 medium yellow or orange bell pepper(---cleaned and diced)1 can black beans-15.50z--drained and rinsed 1 can tomato and green chili-8oz--drained (e.g. Rotel)1 package taco seasoning mix8 whole wheat tortillas2 oz veggie shreds cheddar flavor3 oz black olives chopped
Spray large pot with non-stick cooking spray
Put empty pot on stove on high heat
When pot is hot, 1-2 minutes, put in kale and napa cabbage
add garlic powder, black pepper and red pepper
stirring constantly cook 15-20 minutes or until vegetables are crisp tender
While kale and cabbage are cooking put black beans, tomato and green chili, and yellow bell pepper into a separate sauce pan. Cook on medium heat for 5-10 minutes. Add taco seasoning mix and stir until well blended.
Pre-heat oven to 400.
Spray baking pan with non-stick cooking spray.
Assemble Burrito
Place napa and kale on burrito
add 1/4 cup bean mixture
sprinkle black olive and veggie shreds on burrito
roll and place seam side down on baking sheet
Bake on 450 for 3-5 minuts or until 'cheese' has melted
Garnish with salsa
Serve hot
