Lentil Soup with brown rice and spinach

Ingredients
2 tbsp olive oil1 cup chopped onions3 cloves of garlic1 cup carrots/1 cup celeryspicesspicy pepper pastesalsa (1 cup)1 cup brown lentils1 cup condensed chicken broth, 4 cups water1 cup instant brown rice1 cup frozen spinach
Directions
-Brown the onions and garlic,
-Add celery/carrots, pepper paste and salsa, spices cook for 5mins
- add lentils, stock, water
- cover and cook for 30 mins
- add the rice and spinach
- cook for 5 more minutes
- turn off heat and let settle for 10 more mins.

If too spicy, add sour cream :)
