I made muffins with this recipe, only used 3 medium sized bananas, 1/3 cup of sugar, 1/2 cup applesauce in place of oil, and used 2 eggs and 1 egg white. Delicious and moist! Thanks! - 3/31/09

My hubby thought I was crazy, but I used leftover Bisquick pancake batter as the base for this recipe; I worked out the correct ratios, and added bananas, applesauce, Splenda & brown sugar to make muffins. They are moist, light, flavorful & delicious! And at 75 calories per ounce, very healthy too. - 8/5/10
