Cajun Turkey Sausage & Veggies

Ingredients
Oscar Meyer Turkey Smoked Sausage, 14 oz Onions, raw, 1 largeOlive Oil, 2 tbspPeppers, sweet, red, fresh, 1 large Garlic, 2 cloveCarrots, raw, 3 largeCauliflower, raw, 1 headBroccoli, fresh, 1 bunchCelery, raw, 3 stalk, mediumRed Wine, 2 fl ozCajun Seasoning & Black pepper - to taste
Directions
Chop onion, celery, peppers and garlic and set aside.
Chop carrots and set aside.
Chop cauliflower, and broccoli and set aside.
Cut sausage into bite sized pieces.

Heat oil in a large saucepan.
Add sausage and brown on high heat - stir often.
Add onion mixture and stir on high heat for 5 minutes.
Add carrots, and stir. Cook for 5 minutes on medium heat.
Add broccoli and cauliflower and turn heat up. Stir often.
Add red wine, lower heat to medium, and cover. Cook for 10 minutes.

Serve over whole wheat noodles.

    Here's a variation - skip the cajun flavor, add scallions, Chinese 5-spice, garlic + ginger powders and soy sauce. Switch some of the olive oil for sesame and/or chili oil, but account for the difference. Sprinkle on some roasted almond or sesame seeds-track these. Serve over brown rice.
