150g trimmed baby beetroot3/4 tbsp olive oil1 1/2 tsp red wine vinegarfreshly ground pepperhandful of rocket50g fetta cheses low fat15g walnuts
steam the beetroot for about 30-40 minutes until soft. then peel. quarter and allow to cool in a bowl. mix together the oil vinegar and pepper and toss with beetroot. place the baby rocket in another bowl with the fetta and walnuts. to avoid staining everything red. serve side by side rathere than tossing together
