White Bean Soup

Ingredients
1 small bag white beans (Navy or great northern)2 cloves garlic chopped small1 tbsp dried thyme2 whole bay leafs3 slices turkey bacon 1 medium onion chopped1 cup chopped carrots4 cups chicken broth (low sodium)2 cups left over cooked ham3 medium potatoes1 tbsp EVOO2 cups water
Directions
Soak beans overnight covered in water
Drain in the morning when ready to start soup

In a large soup pot, cook bacon until barely crispy - remove
Add EVOO, chopped onion and garlic saute until onions/garlic are soft.
add chicken broth, bay leafs, thyme, dijon mustard, brown sugar, cubed potatoes, carrots, cubed ham.
Cut up bacon and add back to pot.
Bring to a boil.
Lower heat and simmer until vegetables and beans are soft. Adding water to maintain some fluid.
I allowed my soup to cook most of the day. This caused the soup to be almost stew like.

    This was pretty good. I didn't know how much dijon mustard to add? so I just squeezed some in, maybe a tbsp and used a little less Thyme. - 4/17/09
