Salsa Salad

Ingredients

2 cups cooked corn kernels (fresh, canned or frozen)1 can black beans (rinsed and drained)1 cup cooked wheat berries1/2 cup salsa
Put about half a cup of raw wheat berries in a small cooking pot. Rinse well, cover with water, bring to a boil, and simmer 45-60 minutes until tender, making sure that the berries do not boil dry. (You can cook more wheat berries than that and add them to other dishes, but you only need 1 cup for this recipe.)
While the wheat berries are booking, combine the corn, beans, and salsa in a bowl. Stir periodically to allow flavors to begin to blend.
When the wheat berries are tender, drain any excess water in a colander, measure out 1 cup, and combine with the rest of the ingredients.
Makes 8 1/2 cup servings. It tastes even better the second day when the flavors have had a chance to blend.

Glad you like it. Check out my Moroccan vegetable stew. It's more work, but well worth it.
