BBQ Tempeh Taco Filling

Ingredients
Olive oil nonstick spray1 medium onion, sliced1 green pepper, sliced 2 8 oz. packages tempeh, cubed1/2 C. catsup1 Tbs. blackstrap molasses1 Tbs. apple cider vinegar
Directions
In a small bowl, combine catsup, blackstrap molasses and apple cider vinegar.

Spray a large skillet well with olive oil nonstick spray (about a teaspoon worth of oil). Heat skillet for a minute over medium high heat.

Add onions and pepper and saute for 4-5 minutes. Add tempeh cubes and saute for another 4-5 minutes. Add barbeque sauce and stir to coat evenly. Remove from heat.

Serve on warmed corn tortillas with taco condiments such as lettuce, tomato, shredded carrot or cabbage, and sliced black olives
