Roast Squash with Garlic and thyme

900g Squash4 tbsp Olive oil25g butter4 sprigs thyme6 garlic cloves-sliced
Serves 4
1)Preheat the Oven to 190°C/375°F
2)Halve the Squash and scoop out the seeds/fibres
3)Slice Flesh into wedges approx 2cm thick
4)Put oilve oil and butter in a shallow roasting tin and heat gently
5)Add wedges of squash and scatter leaves of thyme over the wedges
6)Throughly coat the squash and cook for 30-35 mins
7)15 mins into baking, sprinkle over Garlic

sounds great....can I sub olive oil spray for the liquid?

I don't see why you couldn't try it, although the oil is more for baking than frying it.
