Use all low sodium and or low fat canned soups:2 --19 oz cans of Progresso Healthy Classics Lentil Soup1--28 oz can of chopped tomatoes2 --16 oz cans of drained chic peas (garbonzo beans)2--15.5 oz cans of drained hominy corn (white or yellow)1--15 oz can of turkey chili with no beans1--19 oz can of Progresso Hearty tomato Soup2--15 oz cans of black beans1--10 oz can of Rotel tomatoes and green chilis1 each red, yellow, and green bell pepper chopped1 onion chopped1 tablespoon of your favorite hot sauce or tabasco sauce
If you are using fresh chilis instead of canned the start out by sautéing them with some onions and bell peppers. After onions are a clear color start layering the canned goods . Stir. Bring to a boil and simmer for 10-15 minutes, stirring occasionally. Top with shredded cheese and/or sour cream. Enjoy with corn muffins or crackers. :) This dish can easily be made vegetarian style just eliminate the can of turkey chili.
This makes about 32 servings (serving size approx. 1.5 cups) so freeze the remaining for a later date.
