Baked Potato Soup

4- Baked potatoes, scooped out and mashed4- poatoes peeled cubed 3 -Cups Water1 -12 oz can fat free evaporated milk1- Tablespoon Chicken Soup BaseOnion Powder -to tasteSalt - to taste (Seasoning salt optional)Black Pepper - to tasteChives
Scrub 4 potatoes and bake for one hour in 450 degree oven. When done, scoop meat from skins and mash with fork or potato masher, set aside.
While potatoes bake, combine chicken soup base and four cups of water, add peeled and cubed potatoes and boil until fork can easily pierce.
Using a slotted spoon remove potatoes from soup base to a bowl set aside.
Stir the mashed baked potato meat, evaporated milk, and seasoningsinto the soup base. Add the boiled cubed potatoes. Heat until hot. Top with chives. Serve.
