stuffed zucchini

Ingredients
4 whole small carved out zucchini - coating the outside with the olive oil (also can use portabella mushrooms)1 cup bread crumbs or stove top stuffing (sage flavor)1 cup ground turkey10 olives1/4 cup of goat cheese1- 16 oz bag of fresh spinach1 egg1 onion3 cloves garlic
Directions
*Cook ground turkey and onion & garlic- salt & pepper to taste-
*Steam spinach with garlic in seperate pan- drain when done
*mix stove top/bread crumbs (spices), spinach, turkey
*rub down zucchini with olive oil and stuff with mixture
*cook for 1/2 hour @ 400

*top with olives and goat cheese and cook for an additional 15 minutes @ 350 covered with foil
*Makes 4 servings
