Green plantain vegan roast

5 cups ripe red tomatoes, sliced4 garlic cloves1 medium onion, sliced4 green plantains, shreded 4 tbs soy sauce, low sodium1 tsp thyme0.5 tsp basil1 tsp salt12 tbs natural peanut butter1 cup whole wheat flour2 tsp oregano
Blend all the ingredients except the green plantain and flour. Transfer to a mixing bowl and add shreded plantain and flour and stir until is well mixed. Transfer into greased metal containers (empty cans will work perfectly) and cook in a double bolier for 3 hours. Remove from heat and let it cool before cutting into 10 equal portions. Serve this roast with your favorite sauce or use it as lunch meat in your sandwiches, delicious!!!
