Chocolate Buckwheat Pancakes

Ingredients
1 egg (or egg replacer)1 cup soymilk (or fat free milk)1 tsp olive oil1-1/3 cup Buckwheat pancake mix1 scoop Spiru-Tein Cookies & Creamsemi-sweet chocolate chips (optional)
Directions
Mix all ingredients except the chips. Pour into heated skillet (use teflon to cut out need for oil) enough batter for 4 inch pancake. Sprinkle some chips on top & let cook until bubbles form & pop. Flip pancake, let cook until it stops rising & is golden brown.

    This does sound tasty..I think I would stick with milk instead of soy. I'm a big soy milk fan but it tends to really start tasting 'grassy' when its heated. - 3/18/07
