Velvet Lemon Sauce

Ingredients
1/2 Cup of butter (salted)1 raw egg1 tbsp shallot, finely chopped2 tbsp lemon juiceSalt & Pepper to taste
Directions
On a double boiler with water gently simmering add butter, onions and lemon juice till all the butter is melted. Add egg whisking continually. Add salt & pepper and continue to whisk until sauce is thickened. Remove from heat and serve over fish. Wonderful sauce. Everyone I've made this for absolutely loved it.
