Aimee's Tofu Stir Fry

Ingredients
1/2 block extra firm tofu, pressed5 tips fresh asparagus, chopped1/2 cup red bell pepper, chopped1/4 cup carrot, chopped3/4 cup snow peas, trimmed1 cup shiitake mushrooms, stems removed and cubed1/4 cup red onion, chopped1 tbsp sunflower oil2 tbsp low sodium soy sauce1.5 cup white long grain rice
Directions
Prepare rice according to package.
Heat wok or sautee pan on high. Add oil and add ingredients, stirring constantly to avoid sticking. Add soy sauce and cover pan to cook vegetables. Continue cooking to personal taste.
Serve vegetables and tofu over 1/2 cup rice. ENJOY!
