Chicken, Cheese and Biscuits

1 tsp butter1 tbsp flour1/2 tsp dry mustard1.5 c 1% milk4 oz low fat cheddar8 oz cooked chciken breast, diced1 c carrots1 c green beans1/4 onion, chopped1 small pkg canned biscuitsdash salt and pepper
In small saucepan, saute onions until tender. In 3 quart saucepan, heat butter over medium heat until bubbly and hot. Add flour and mustard and stir quickly to combine thoroughly. Stiring constantly, gradually add milk, continue to stir and cook until smooth. Add broth mix and pepper and mix well. Reduce heat to low and cook, stirring occasionally, until mixture is thick, 5 to 10 minutes. Add cheese and cook, stirring until melted. Add chickena nd vegetables and continue cooking until chicken an vegetables are heated through.
Preheat oven to 400, spray cassarole dish with cooking spray, and pour chicken mixture into dish. Separate each biscuit into two layers of dough. Arrange on top of chicken mixture. Bake until biscuits are golden, 7 to 10 minutes.
