Warm Potato Salad

Ingredients
About 3 pounds of potatoes3 slices of bacon 1/2 cup of onion1 cup of chicken broth1/2 cup of olive oil1/2 cup of vinegarseason with salt and pepper
Directions
Cook potatoes with the skin on until tender, drain and let them cool. Once cool peel the potatoes, and slice thin. While the potatoes are cooking, you can fry up the bacon and set aside, drained of fat. Add raw onion, chicken broth, oil and vinegar and mix together until potatoes are moistened. Add salt and pepper for taste. You can add boiled eggs sliced in have on the top and a few pieces of parsley for decoration.
