Cauliflower Kale Soup

Ingredients
1 head cauliflower1 cup chopped cale1 cup baby carrots1 onion1 clove garlic2 cups milk1 cup cheddar cheese
Directions
Saute onion in water or oil. Add cauliflower, kale, garlic & carrots. Cover with water and boil for 20 mins. Puree in blender with 2 cups of milk and return to pot. Add cheese and stir to melt.

    Really good! The recipe doesn't say what kind of milk to use-I used 1% and it was plenty creamy. Add salt to taste and I added pepper as well. - 1/8/13
