1 can Pinto Beans (15 oz)I can Black Eyed Peas (15 oz)1 can White Shoepeg Corn (11 oz)4 oz jar diced Pimentos2 cups finely chopped Bell Peppers (red, green, yellow)2 cups finely chopped Celery 1 small Onion finely choppedMarinate:1 teaspoon Salt1/2 teaspoon Pepper1 Tablespoon Water3/4 cup Cider Vinegar1/2 cup Salad Oil1 cup Sugar
This recipe makes approximately 15 half cup servings.
In saucepan mix marinate ingredients and stir until brought to boil.
Let the marinate cool then pour over the remaining ingredients.
Mix well, cover, and refrigerate for 24 hours. Drain and serve. Can be kept up to 2 months in the refrigerator.
