Ingredients
4 tsp olive oil3/4 tsp salt3 lbs peeled baking potatoes, cut into 1/4-inch-thick strips (lenghwise)Cooking spray2 T butter8 cloves garlic, minced (about 5 tsp)2 T fresh parsley, finely chopped2 T fresh Parmesan cheese, grated
Directions
1) Preheat oven to 400 degrees F.
2) Combine first 3 ingredients in a large zip-top plastic bag, tossing to coat. Arrange potatoes in a single layer* on a baking sheet coated with cooking spray. Bake at 400 degrees for 50 minutes or until potatoes are tender and golden brown, turning after 20 minutes.
3) Place butter and garlic in a large nonstick skillet, and cook over med. heat 2 minutes, stirring constantly. Add potatoes, parsley, and Parmesan cheese to pan; toss to coat. Serve immediately.

*Note: Make sure the potatoes are in a single layer. If not, when they are on top of each other or touching, they create a steaming effect and don't crisp up and you will have soggy potatoes, not french fries. Trust me, I have learned from experience! : ( If you need to use two baking sheets, do so and just rotate them a couple of times during baking. The fries will turn out fine.
