Garlic Chicken

Ingredients
Chicken, 1 about 3 lbs.Fresh Thyme sprigs, 4Garlic, 2 whole heads, cloves separated and peeledUnsalted Butter, 3 tablespoons, at room temperature (can use less)Salt and Black pepperOlive oil, 1 tablespoonWhite Wine, 1/2 cupChicken Broth 1/2 cupsauteed seasonal vegetables
Directions
Place 2 thyme sprigs and 6 garlic cloves in the cativity of the chicken. Rub half the butter all over the skin. season well with salt and pepper. heat the remaining butter and the olive oil in a large frying pan over medium-high heat. brown the chicken on all sides until evenly colored, about 12 minutes. transfer to the slow cooker. pour off and discard most of the fat from the pan, then add the wine and broth and deglaze, stirring and scraping over medium heat to dissolve the pan deposits. pour the deglazing liquid over the chicken and surround with the remaining garlic. cover and cook on high for 5-6 hours. garnish with seasonal vegetables. the garlic cloves are great spread onto crusty bread!

This serves 4-6...the nutritional information is for five servings.

Also i used the left over chicken and broth...added more chicken broth and water and veggies and made soup!
