Light Peach Bread

Ingredients
1/2 cup butter1/2 cup sugar3 medium eggs1/2 tsp ground ginger1 1/2 tsp ground cinnamon2 3/4 cups flour1 1/2 tsp baking powder1/2 tsp baking soda2 cups canned peaches, water pack1 tsp vanilla1/2 tsp salt
Directions
Cream butter and sugar. Add eggs, one at a time and mix well. Mix dry ingredients in separate bowl. Mash peaches. Add to batter, alternating with dry ingredients. Mix well. Add vanilla and stir well. Grease loaf pan or use cooking spray. Divide batter into 2 small loaf pans. Bake at 350 degrees for 1 hour or until toothpick inserted into center comes out clean
