Spinach-Cheese Stuffed Manicotti

manicotti, uncooked - 8 oz (14 shells)onion, diced - 1/2 cupdiced tomatoes - 2 cans (14.5 oz each), undrainedtomato sauce - 8 oz.tomato paste - 6 ozbrown sugar - 2 tsp unpackedoregano - 1 tspsalt - 1/2 tsppepper - 1/4 tspspinach, canned - 2 cans, drained and liquid squeezed outcottage cheese, fat free - 24 ozpart-skim mozzarella cheese, shredded - 1 cup (4 oz)pepper - 1/4 tspParmesan cheese - 1/2 cup
Add onions, canned tomatoes, tomato sauce, tomato paste, brown sugar, oregano, salt and 1/4 t pepper into a pot and bring to a boil. Turn heat down and simmer while you assemble filling and stuff shells.
Combine drained and squeezed spinach, cottage cheese, mozzarella cheese and 1/4 t pepper, mix well. Stuff the 14 manicotti shells with mixture.
Put a thin later of tomato sauce mix on the bottom of a 9x13 pan and arrange stuffed shells in the pan.
Top with the remaining sauce and sprinkle Parmesan cheese over the top.
Cook at 350 for 35 minutes or until heated through and shells are soft.
2 shells with sauce equals one serving.
