Asian Wild Rice Salad

Ingredients
2 C Wild Rice: cook in 6 C salted water until tender, drain3 med. carrots, julienned1 med. red bell pepper, julienned2 C asparagus, cut in 2"pieces5 green onions, cut white & green1 bunch Kale, stems removed, torn2 Tbsp. soy sauce2 Tbsp. sesame oil1.5 Tbsp. rice vinegar1 Tbsp. honeyhot sauce to taste3 Tbsp. toasted sesame seeds
Directions
Blanch carrots, asparagus, and kale until tender crisp. Add to bowl with rice, peppers, and scallions. Mix dressing ingredients and toss with salad.
Top with sesame seeds...Enjoy!
