Spicy Peanut Chicken

1/8 c. chicken broth1/2 T cornstarch1/2 T sugar1 T soy sauce1/2 T white vinegar1/8 t ground red pepper1/2 T olive oil4 oz. chicken breast, skinless, boneless, diced into small chunks1/2 garlic clove, chopped finely1 oz. dry roasted peanuts, unsalted1/2 c. cooked white rice
Mix broth, cornstarch, sugar, soy sauce, vinegar, and ground red pepper. Set aside.
Heat wok or nonstick skillet over high heat. Add oil, rotate pan to coat. Add chicken and garlic. Stir fry for about 3 minutes or until chicken is cooked through.
Add broth mixture to pan. Cook and stir about 1 minute or until sauce is thickened. Stir in peanuts.
Serve over rice. Serves one very hungry person or two not so hungry people. (The calorie count's not so scary if you split this recipe between two people and serve with a nice light salad.)
