Sicilian Chicken

.5 tbsp basil.5 tbsp oregano.25 tsp cinnamon1 tsp salt1 tsp pepper3 tsp sugar2 tbs olive oil1 tsp red wine vinegar1 tsp capers1 medium onion diced1 clove garlic diced2 cans of petite diced tomatoes6 chicken breasts
In a pan heat 1 tbsp of the oilive oil. Season the chicken breasts on both sides with extra salt and pepper (the amount called for above is for the sauce). Lightly brown the chicken breasts on both sides and then set aside on a plate for later.
Add the remaining tbsp of oilive oil and heat your pan. Add the diced onion and garlic and cook until softened. Then add the spices from above (basil, oregano, cinnamon, salt and pepper). Cook a few minutes more then add the tomatoes, vinegar, sugar, and capers. Bring this mixture to a simmer then add the chicken breasts back to the pan. Cover and simmer for 10 minutes, or until the chicken is cooked through.
