Spinach Stuffed Artichoke

10 large Artichokes5 oz shredded Mozzerella200 ml sour cream100 g feta15 0z frozen shopped spinach (thawed and drained)2T pistachios choppedSalt, Pepper and granulated garlic to taste
Prepare artichokes by cutting stem off flat across the base and snipping off the tops of the leaves. Remove inner leaves and scape heart clean.
Mix together all other ingredients then divide evenly filling the artichokes.
Steam Artichokes for about 30 min until the bottom can be easily pierces with a knife.
Serve warm using the middle filling as your dip for the leaves.
