Crab Bisque

2T butter3 T chopped onion or scallions2 T flour1/2 t paprika1/4 C tomato paste2 C Chicken broth16 oz. can crab meat or 2 Dungeness Crabs-cooked, cracked and meat harvested, add 1T sugar to it2 cups half and half or heavy whipping cream
sautee onion in butter, add flour and mix until bubbly. Add paprika and mix in. Keep at a bubble, then add tomato paste and whisk in. Then add chicken broth - still keep bubbling. Finally add crab mixture and half and half (can use whole whipping cream too). Cook 5-7 minutes longer on medium heat, keep stirring until heated through nicely. I add a little sugar to the crab meat - optional. The original recipie was with Dungeness Crab - which is nice and sweet.
