Chicken breast with artichoke and feta

* Olive Oil, 3 tbsp * Chicken Breast, no skin, 2 breast, bone and skin removed *Imagine Organic Vegetable Broth, .75 cup Artichokes, frozen, 1 package (9 oz) (remove) * Shallots, 1 tbsp chopped (remove) * *Lemon Juice, .5 lemon yields (remove) * Feta Cheese, .25 cup, crumbled (remove)
Cut the two boneless chicken breast in half lengthwise,season with salt and pepper, saute over med-high heat in 1/2 of the olive oil. Turn over and cook until done, about 14 minutes total. Transfer to a plate and cover to keep warm. Add remaining oil and saute shallots and chopped artichoke hearts, saute 3 minutes until lightly browned, add 3/4 c vegetable broth, and cook until liquid is reduced by 1/2. Add 1/4 c chopped fresh mint and lemon juice, take off heat and add feta. Pour over cooked chicken breast.
