Greek Stew

Ingredients
# Onions, raw, 1 medium (2-1/2" dia) (remove)# Garlic, 2 cloves (remove)Red Pepper Flakes# Olive Oil, 1 tbsp (remove)# *Del Monte Petite Cut Diced Tomatoes, 2 cup (remove)# Chickpeas (garbanzo beans), 2 cup (remove)# Spinach, fresh, 1 package (10 oz) (remove)# Tofu, extra firm, 0.3 block (remove)Oregano, Salt, Pepper, Greek SeasoningParsley
Directions
Sauté onion in hot oil in a Dutch oven over medium-high heat 4 to 5 minutes or until tender. Add garlic, and cook 1 minute. Stir in tomatoes and next 2 ingredients. Bring to a boil; reduce heat to low, and simmer, stirring occasionally, 15 minutes. Stir in spinach and chopped parsley; cook 5 minutes. Top with crumbled feta cheese, if desired. Spice it up!
