Horseradish Vegetarian Stir Fry

1/5 block of firm tofu1/2 tbsp prepared horseradish1 cup spinach1/2 cup snow peas1/2 cup baby carrots1 fist full of asparagus (approx. 3 ounces)1 tbsp low sodium soy sauce3 cloves garlicMrs. Dash Extra SpicyMrs. Dash Garlic & Herb
Mince garlic and put in ziplock bag with soy sauce. Cut tofu into 6 pieces and put in bag with mixture. Add Extra Spicy Mrs. Dash, close bag, mix, and set aside to marinate.
Cut carrots into long strips. Put in greased pan with peas and asparagus. Heat on medium-high until sizzling, then add 1/4 cup water. Immediately put lid on pan. After 3 minutes, open, add horseradish and Garlic & Herb Mrs. Dash. Stir to combine. Let sit for 3 minutes on medium heat.
Add spinach to pan and mix until spinach just begins to wilt. Add tofu with all the sauce in the bag to the pan, mix lightly, and cover. Let it cook on medium heat for 5 minutes.
Serves two as a side dish, or one as a meal.
