Nutty Butterscotch Oat Squares

Ingredients
1 C. Brown Sugar5 T. Vegan Margarine1 t. Vanilla1/2 C. All Whites Liquid Egg Whites9 oz. Whole Wheat Flour2 1/2 C. Quick Oats1/2 t. Baking Soda3/4 C. Fat Free Condensed Milk1/2 C. Walnuts, Finely Chopped
Directions
1. Preheat oven to 350. Spray a 9x13 pan.

2. Grind 2 Cups of the Quick Oats in Blender to a fine flour consistency.

3. Combine Sugar and Butter in bowl, add vanilla and egg whites. Weigh the flour on scale to 9 ounces.

4. Combine Flour, Oats, and Baking Soda in separate bowl. Add oat mixture into sugar mixture, slowly stirring with fork until combine. Mixture will be crumbly.

5. Place 1/2 of the mixture in pan. Pressing firmly to cover entire bottom.

6. Heat butterscotch morsels and milk in microwave, stirring every 20 seconds until melted. Add walnuts. Spread mixture on top of oat mixture in pan. Top with remaining oat mixture, gently pressing into milk mixture.

7. Bake for 30 minutes, or until top is golden brown. Run a knife around edges of pan. Cool completely before slicing into 36 bars.

My bars were about 2x3.

    first issue is that it doesn't say how many butterscotch chip to use, so I just used about half of a 12 ounce bag. Second of all, my mixture did not turn out as crumbly as I expected it would, so the second layer of oat mixture had to be flattened by hand and then spread evenly over the butterscotch - 6/18/15
