Cualiflower cheese soup

Ingredients
1 Leek sliced and washedI raw onion, medium, slicedI large cauliflower head chopped into segments1 teaspoon olive oil2 oz grated cheddar cheese1 tablespoon reduced fat sour creamAbout 1 1/2 pints waterSea salt and black pepper
Directions
Makes 8 servings. Sweat leek and onion with lid on in 1 teaspoon olive oil. Add cauliflower and mix in. Add water, bring to boil, simmer 20 mins. Blend v finely, return to heat and stir in grated cheese and low fat sour cream. Season to taste.
