Ingredients
2 Tblsp. extra virgin olive oil2 carrots, peeled & chopped2 ribs celery,chopped\1 medium onion, chopped2 bay leavessalt & pepper.75 lb. 93% lean ground turkey.75 lb. 93% lean ground beef1 egg, beaten2 cloves garlic, minced1/2 cup parmesan cheese1/2 cup plain bread crumbs6 cups low fat chicken broth2 cups water11/2 cups dry pasta1 bunch spinach
Directions
In deep pot heat oil, carrots, celery, onion, and bay leaves. Add salt and pepper. Cover and cook veggies 5-6 mins. While veggies cook combine meat, egg, garlic, chees, bread crumbs, salt, and pepper form into bite size meatballs. Uncover veggies add broth and water. Increase heat, bring to a boil, then reduce heat slightly. Add meatballs and pasta. Simmer 10 minutes. Stir in spinach until wilted and serve!
