Collards, 2 cup, choppedBacon, 4 medium slices, cookedOnions, raw, 1 medium (2-1/2" dia)Cider Vinegar, 3 tbspChicken BrothPepper, red or cayenne, 1 tspBrown sugar, 3 tspThyme
Cut bacon into small pieces. Fry. Put bacon on paper towels. Drain pan of all but a teaspoon of bacon fat.
Saute onions in bacon fat until translucent. Add collards and saute until wilted.
Add cider vinegar, chicken broth, red pepper, brown sugar, and thyme.
Bring to a boil, then cover and simmer for a long time until collards are tender.
