Quiche Cups with Asparagus and Spinach

6 eggs3/4 c. mozzarella cheese1/4 c. baby spinach, chopped2 medium asparagus spears, chopped
Preheat over to 350*F. Spray muffin tin with nonstick spray. Whisk eggs in medium bowl. Add all other ingredients, stir. Pour scant 1/4 cup portions into muffin tin. Bake at 350*F for about 20 minutes. Makes 12 mini-quiche cups.
You can use other vegetables too for variety. I adapted this form another Sparkpeople recipe and have enjoyed the various results I've gotten depending on the veggies used.
